What is in the box

Hibiscus Rose, Loose Tea 3.53oz, 50+ cups. Whole hibiscus petals with rose.
Sharp and tart, the colour of a beetroot, and the one to sweeten a little.

Blue Pea, Loose Tea 1.41oz, 40+ cups. Whole dried butterfly pea flowers.
A smaller pouch than the other two because the flowers are almost weightless,
and it still makes 40 cups. Very mild on its own, which is the point: it is
there for what it does, not what it tastes of.

Mango Passion, 25 Pyramid Bags. Hibiscus base with mango and passion fruit.
The sweetest and most straightforward of the three, and the easiest to hand
someone who does not normally drink herbal tea.

The colour change, which is the fun part

Brew the Blue Pea on its own and it comes out a deep blue. Squeeze in lemon or
lime and it turns violet, then pink, in about two seconds. It is the
anthocyanins in the flower reacting to the acid, the same pigment that makes
red cabbage change colour. Nothing is added and nothing is artificial.

Layer it over ice with the Mango Passion underneath and you get a two tone
glass that holds for a minute or so before it mixes.

How to brew all three

Boiling water, covered, 5 to 8 minutes. None of the three turns bitter if you
forget it.

For iced, which is how we would drink all three: two bags or two heaped
teaspoons in a litre jug of cold water, in the fridge overnight. No bitterness
at all, because cold water never pulls the tannins out, and it keeps two days.

How to brew it

Three teas, three rules

Nothing here is fussy. Each tea wants one thing, and once you know which of the three it belongs to you will get it right every time.

Chai

Boil it, do not steep it

Two heaped teaspoons in a cup of water, boil hard for two minutes, add a cup of milk and bring it back. Sugar goes in the pan, not the cup.

Black

Straight off the kettle

3 to 5minutes

One heaped teaspoon, boiling water, and take it out on time. Past five minutes the tannins come through and it turns sharp. Takes milk well.

Green

Never boiling water

Let the kettle stand two minutes off the boil first. Boiling water is what makes green tea bitter. About a third the caffeine of coffee.
