How to brew it
Three teas, three rules
Nothing here is fussy. Each tea wants one thing, and once you know which of the three it belongs to you will get it right every time.
Boil it, do not steep it
Two heaped teaspoons in a cup of water, boil hard for two minutes, add a cup of milk and bring it back. Sugar goes in the pan, not the cup.
Straight off the kettle
One heaped teaspoon, boiling water, and take it out on time. Past five minutes the tannins come through and it turns sharp. Takes milk well.
Never boiling water
Let the kettle stand two minutes off the boil first. Boiling water is what makes green tea bitter. About a third the caffeine of coffee.
